Ingredients

  • 500 grams Brinjal (eggplant)
  • 4 tablespoons Vegetable oil
  • 4 medium Shallots
  • 4 Garlic cloves
  • 3 Red chilies
  • 5 Dried red chilies
  • 2 tablespoons Tomato paste
  • 2 teaspoons Tamarind pulp
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 125 ml Water

Directions

Step 1

Wash and slice the brinjals into thick batons or rounds. Soak them in salted water for 10 minutes to remove bitterness, then drain and pat dry.

Step 2

Heat 2 tablespoons of vegetable oil in a large frying pan. Fry the brinjals in batches until golden and slightly softened. Remove and set aside.

Step 3

In a blender or mortar and pestle, grind the shallots, garlic, fresh red chilies, and dried red chilies into a smooth paste.

Step 4

Heat the remaining 2 tablespoons of oil in the pan on medium heat. Add the chili paste and sauté for 5–7 minutes until fragrant and the oil separates from the paste.

Stir in the tomato paste, tamarind pulp, sugar, and salt. Mix well.

Add the water and let the sambal simmer for 5 minutes.

Return the fried brinjals to the pan and gently toss to coat them in the sambal. Cook for another 5 minutes until the flavors meld together.
