Ingredients

  • 400 g linguine pasta
  • 200 g brie cheese
  • 300 g cherry tomatoes
  • 3 garlic cloves
  • 3 tbsp olive oil
  • 10 fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 120 ml reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 120 ml of pasta water before draining.

Step 2

While the pasta cooks, prepare the brie cheese by cutting off the rind and slicing it into small cubes. Set aside.

Step 3

Halve the cherry tomatoes and finely mince the garlic cloves.

Step 4

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Add the halved cherry tomatoes to the skillet. Sprinkle with salt, black pepper, and red pepper flakes (if using). Cook for 5-7 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.

Step 6

Reduce the heat to low and stir in the reserved pasta water. Let it simmer for 1-2 minutes to create a light sauce.

Step 7

Add the cooked linguine to the skillet and toss to coat it with the tomato sauce.

Step 8

Scatter the cubed brie cheese over the pasta and gently toss until the cheese melts and creates a creamy sauce that coats the linguine.

Step 9

Tear the fresh basil leaves and add them to the skillet. Toss once more to combine.

Step 10

Serve immediately, garnished with additional basil leaves if desired.
