Ingredients

  • 300 g Brie cheese
  • 2 sheets Puff pastry (store-bought or homemade)
  • 1 large Egg
  • 2 tbsp Heavy cream
  • 2 tbsp Honey
  • 1 tsp Fresh thyme leaves
  • 0.5 tsp Cracked black pepper
  • 2 tbsp All-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Lightly dust your work surface with flour. Roll out the puff pastry sheets if needed to ensure they're even and large enough to cover the brie.

Step 3

Place one sheet of puff pastry on the prepared baking sheet.

Step 4

Slice the brie cheese into 1 cm thick slices and arrange them in the center of the pastry, leaving a 2.5 cm (1 inch) border around the edges.

Step 5

Drizzle the honey evenly over the brie slices. Sprinkle the thyme leaves and cracked black pepper on top.

Step 6

In a small bowl, beat the egg with the heavy cream to create an egg wash.

Step 7

Brush the edges of the pastry around the brie with the egg wash.

Step 8

Place the second sheet of puff pastry on top of the brie and press down gently around the edges to seal. Trim off any excess pastry, if needed, and crimp the edges with a fork.

Step 9

Brush the entire surface of the pie with the remaining egg wash to ensure a golden-brown finish.

Step 10

Using a sharp knife, gently score a decorative pattern on the top of the pastry, taking care not to cut all the way through.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Step 12

Remove from the oven and allow the pie to cool slightly for 5 minutes before slicing and serving.

Step 13

Serve warm and enjoy the gooey, cheesy goodness!
