Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 cups leeks (white and light green parts only, thinly sliced)
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 slices crusty sandwich bread (such as sourdough or ciabatta)
  • 6 ounces brie cheese (sliced thinly)
  • 2 teaspoons Dijon mustard
  • 2 tablespoons butter (for grilling the sandwiches)

Directions

Step 1

Heat a skillet over medium-low heat and add the olive oil and unsalted butter.

Step 2

Once the butter has melted, add the sliced leeks and cook for 8-10 minutes, stirring occasionally, until the leeks are soft and lightly caramelized. Season with salt and black pepper. Remove from the heat and set aside.

Step 3

Spread a thin layer of Dijon mustard on one side of each slice of bread.

Step 4

On two slices of bread, arrange half of the brie slices evenly, followed by half of the caramelized leeks. Top with the remaining bread slices, Dijon side down, to assemble the sandwiches.

Step 5

Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, place the sandwiches in the pan.

Step 6

Cook the sandwiches for 2-3 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the brie has melted. Add the second tablespoon of butter to the pan when flipping, if needed.

Step 7

Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing in half. Serve warm and enjoy!
