Ingredients

  • 12 sheets phyllo pastry sheets
  • 500 grams ground beef or lamb
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams unsalted butter, melted
  • 1 yolk egg yolk
  • 1 tablespoon sesame seeds

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat olive oil in a skillet over medium heat. Add the finely chopped onion and cook for 3–4 minutes until soft and translucent.

Step 3

Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef (or lamb) to the skillet. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5–7 minutes.

Stir in the cumin, paprika, salt, black pepper, and fresh parsley. Set the mixture aside to cool slightly.

Lay one phyllo pastry sheet on a clean surface. Brush it lightly with melted butter. Place another phyllo sheet on top and brush it with butter as well.

Scoop about 2–3 tablespoons of the meat filling onto one end of the layered pastry sheet. Fold the pastry over the filling, shaping it into a triangular or rectangular pasty. Continue folding until the filling is fully enclosed.

Repeat the process with the remaining pastry sheets and filling.

Place the prepared borek on a baking tray lined with parchment paper. Brush the tops with a beaten egg yolk and sprinkle sesame seeds over them.
