Ingredients

  • 8 small baby potatoes
  • 2 tablespoons olive oil
  • 1 large red bell pepper
  • 1 medium yellow onion
  • 2 cloves garlic
  • 4 large eggs
  • 2 cups spinach
  • 1 tablespoon soy sauce
  • 2 stalks green onions
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red chili flakes

Directions

Step 1

Wash the baby potatoes and slice them into thin rounds about 1/4 inch thick.

Step 2

Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat. Add the sliced potatoes and cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender. Transfer the potatoes to a plate and set aside.

Step 3

Dice the red bell pepper and yellow onion into small pieces. Mince the garlic.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and red bell pepper. Cook for 3-4 minutes until the vegetables begin to soften.

Add the minced garlic to the skillet and sauté for 30 seconds until fragrant.
