Ingredients

  • 3 medium potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 ounces ground sausage
  • 2 medium bell peppers (assorted colors, diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 4 large eggs
  • 0.5 cup shredded cheddar cheese
  • 2 stalks green onions (chopped)

Directions

Step 1

Peel and dice the potatoes into small, bite-sized cubes.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes, season with salt and black pepper, and cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.

Step 3

Add the ground sausage to the same skillet and cook over medium heat, breaking it up with a spatula, until browned and fully cooked. Remove the sausage from the skillet and set aside.

Heat the remaining 1 tablespoon of olive oil in the skillet. Add the bell peppers, onion, and garlic. Cook for 5-6 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.

Return the cooked potatoes and sausage to the skillet, mixing everything together. Spread the mixture evenly in the skillet.
