Ingredients

  • 300 grams all-purpose flour
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 100 grams unsalted butter (cold, diced)
  • 120 milliliters whole milk
  • 50 milliliters heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 100 grams optional: raisins or chocolate chips
  • 2 tablespoons optional: additional milk (for brushing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, diced butter to the bowl. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the milk, heavy cream, egg, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients. Use a fork or spatula to gently stir until the mixture starts to come together. Do not overmix.

Step 6

If you're adding raisins or chocolate chips, fold them into the dough at this stage.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat it into a circle about 2.5 cm (1 inch) thick.

Step 8

Use a round cutter or knife to cut the dough into 8 equal pieces. Place the scones onto the prepared baking sheet, leaving about 2.5 cm (1 inch) of space between each.

Step 9

For a golden finish, brush the tops of the scones with a little milk or cream.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are risen and golden on top.

Step 11

Remove from the oven and allow to cool slightly before serving. Enjoy warm with butter, jam, or clotted cream as desired.
