Ingredients

  • 4 slices Rye bread
  • 2 tablespoons Butter
  • 4 ounces Corned beef
  • 4 slices Swiss cheese
  • 1 cup Sauerkraut
  • 2 large Eggs
  • 4 tablespoons Thousand Island dressing
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat a large skillet or griddle over medium heat.

Step 2

Spread 1/2 tablespoon of butter on one side of each slice of rye bread.

Step 3

Place two slices of bread, buttered side down, onto the skillet.

Step 4

Top each slice of bread with 2 ounces of corned beef, 1/2 cup of sauerkraut, and 2 slices of Swiss cheese.

Step 5

Spread 1 tablespoon of Thousand Island dressing on the unbuttered side of the remaining slices of bread, then place these slices dressing-side down on top of the sandwiches in the skillet.

Step 6

Press the sandwiches gently with a spatula and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese has melted. Remove the sandwiches from the skillet and set them aside.

Step 7

In a separate nonstick skillet, melt the remaining 1 tablespoon of butter over medium heat.

Step 8

Crack the eggs into the skillet and season with salt and black pepper. Fry the eggs sunny-side-up for 2-3 minutes, until the whites are set and the yolks are still runny.

Step 9

Place one fried egg on top of each sandwich before serving.

Step 10

Cut the sandwiches in half and serve immediately, enjoying the gooey cheese, savory beef, and runny yolk in every bite.
