Ingredients

  • 1 piece store-bought pie crust
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices cooked and crumbled bacon
  • 1 cup chopped spinach
  • 0.5 cup diced onion
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out the store-bought pie crust into a 9-inch pie pan and press it evenly across the bottom and sides. Trim any excess dough and set aside.

Step 3

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened. Add the chopped spinach and cook for another 2 minutes, until wilted. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until smooth.

Step 5

Stir in the shredded cheddar cheese, cooked and crumbled bacon, and the cooled onion-spinach mixture.

Step 6

Pour the egg mixture into the prepared pie crust, spreading it out evenly.

Step 7

Place the quiche in the oven and bake for 35-40 minutes, or until the filling is set and the top is lightly golden. A knife inserted into the center should come out clean.

Step 8

Remove the quiche from the oven and let it cool for 10 minutes before slicing and serving.

Step 9

Enjoy your delicious breakfast quiche!
