Ingredients

  • 0.5 cup unpopped popcorn kernels
  • 2 tablespoons coconut oil (or vegetable oil)
  • 2 tablespoons honey (or maple syrup)
  • 0.5 teaspoons ground cinnamon
  • 0.25 cup dried cranberries (or raisins)
  • 0.25 cup chopped nuts (walnuts, almonds, or pecans)
  • 0.25 cup granola clusters
  • 2 tablespoons shredded coconut (optional)
  • 0.25 teaspoons sea salt

Directions

Step 1

Heat the coconut oil in a large, heavy-bottomed pot over medium heat. Add the popcorn kernels and cover with a lid.

Step 2

Shake the pot occasionally to prevent burning, and continue cooking until the popping slows to 2-3 seconds between pops. Remove from heat immediately.

Step 3

Pour the freshly popped popcorn into a large mixing bowl and drizzle with honey (or maple syrup) while it’s still warm.

Step 4

Sprinkle the ground cinnamon and sea salt over the popcorn, then carefully toss to distribute evenly.

Step 5

Add the dried cranberries, chopped nuts, granola clusters, and shredded coconut (if using). Toss again to combine.

Step 6

Serve immediately as a delightful breakfast treat. Store any leftovers in an airtight container for up to 2 days.
