Ingredients

  • 2 pieces Ciabatta bread or panini rolls
  • 4 pieces Large eggs
  • 4 pieces Bacon strips
  • 4 slices Cheddar cheese (slices)
  • 2 tablespoons Butter
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Mayonnaise
  • 0.5 cups Baby spinach leaves
  • 1 teaspoons Olive oil

Directions

Step 1

Preheat a panini press or grill pan over medium heat.

Step 2

In a large skillet, cook the bacon strips over medium heat until crispy. Remove from the skillet and place on a paper towel to drain excess grease.

Step 3

In the same skillet, remove excess grease, leaving about 1 teaspoon, and lightly scramble the eggs. Season with salt and black pepper. Set aside.

Step 4

Cut the ciabatta bread or panini rolls in half lengthwise. Spread a thin layer of mayonnaise on the inside of each half.

Step 5

Layer the bottom half of the bread with 2 slices of cheddar cheese, followed by scrambled eggs, crispy bacon, baby spinach leaves, and another slice of cheese. Top with the other half of the bread.

Lightly brush the outside of the bread with olive oil or melted butter to help it crisp up during cooking.

Place the panini on the preheated press or grill pan. Close the press or use a heavy skillet to press the sandwich. Cook for about 3-5 minutes, or until the bread is golden and crispy and the cheese is melted.
