Ingredients

  • 1.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Sugar
  • 0.75 cups Milk
  • 0.25 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 1 large Egg
  • 1 cup Breakfast cereal (your choice)
  • 0.5 cups Optional add-ins like raisins, chocolate chips, or nuts

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a standard muffin tin with paper liners or lightly grease with nonstick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until evenly combined.

Step 3

In a separate medium-sized bowl, combine the milk, vegetable oil, vanilla extract, and egg. Whisk until well incorporated.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together using a rubber spatula or wooden spoon. Be careful not to overmix; the batter should just come together.

Step 5

Gently fold in the breakfast cereal of your choice and any optional add-ins like raisins, chocolate chips, or nuts.

Step 6

Evenly divide the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18–20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
