Ingredients

  • 4 large eggs
  • 1 cup cherry tomatoes
  • 2 cups baby spinach
  • 4 links breakfast sausage
  • 1 medium red bell pepper
  • 1 small yellow onion
  • 3 ounces shredded cheddar cheese
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons chopped parsley

Directions

Step 1

Begin by preparing your ingredients: slice the cherry tomatoes in half, roughly chop the baby spinach, dice the red bell pepper and onion, and chop the parsley. Set everything aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. While the oil is heating, slice the sausage links into bite-sized pieces.

Step 3

Add the sausage pieces to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked. Remove the sausage with a slotted spoon and set aside, leaving the oil in the pan.

Step 4

In the same skillet, add the diced onion and red bell pepper. Sauté for 3-4 minutes, or until the vegetables are softened.

Step 5

Stir in the cherry tomatoes and cook for another 2 minutes, allowing them to release their juices.

Step 6

Add the baby spinach to the skillet and cook for 1-2 minutes, stirring continuously, until wilted.

Step 7

Return the cooked sausage to the skillet and stir everything together. Season with salt and black pepper.

Step 8

In a separate bowl, whisk the eggs until fully beaten. Pour the eggs evenly over the sausage and vegetable mixture in the skillet.

Step 9

Reduce the heat to low and cover the skillet with a lid. Allow the eggs to cook gently for about 5-7 minutes, or until set.

Step 10

Sprinkle the shredded cheddar cheese over the top, re-cover the skillet, and let the cheese melt (about 1-2 minutes).

Step 11

Remove the skillet from the heat and garnish with chopped parsley before serving.

Step 12

Serve hot and enjoy your Breakfast Blast!
