Ingredients

  • 300 grams stale crusty bread
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 yellow onion, finely chopped
  • 1 liter chicken or vegetable broth
  • 2 medium ripe tomatoes, diced
  • 2 fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams Parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Cut the stale crusty bread into bite-sized cubes and set aside.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the minced garlic and chopped onion to the pot, cooking for 3-4 minutes until softened and fragrant.

Step 4

Stir in the diced tomatoes and cook for another 3 minutes to release their juices.

Step 5

Add the bread cubes to the pot, stirring occasionally, and let them toast for 2-3 minutes.

Step 6

Pour in the chicken or vegetable broth and add the fresh thyme sprigs. Bring the soup to a gentle boil.

Step 7

Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the bread softens and breaks apart to thicken the soup.

Step 8

Season the soup with salt and black pepper. Taste and adjust the seasoning as needed.

Step 9

Remove the thyme sprigs from the pot. Optionally, stir in grated Parmesan cheese for added richness.

Step 10

Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve warm and enjoy!
