  • 3 medium Tomatoes
  • 1 medium Cucumber
  • 150 grams Canned tuna in olive oil
  • 2 tablespoons Capers
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Cut the ciabatta bread into 2-3 cm cubes and spread them out on a baking sheet.

Step 3

Drizzle 2 tablespoons of olive oil over the bread cubes and toss them to coat evenly.

Step 4

Toast the bread in the preheated oven for 10 minutes or until golden brown and crisp. Set aside to cool.

Step 5

Thinly slice the red onion and soak it in cold water for 5 minutes to mellow its flavor. Drain and set aside.

Step 6

Dice the tomatoes and cucumber into bite-sized pieces and transfer them to a large mixing bowl.

Step 7

Drain the tuna and flake it into chunks with a fork. Add it to the mixing bowl with the tomatoes and cucumber.

Add the capers, toasted bread cubes, and sliced red onion to the mixing bowl.

Step 9

Chop the fresh parsley and sprinkle it over the salad.

Step 10

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, red wine vinegar, salt, and black pepper to create the dressing.

Step 11

Pour the dressing over the salad and toss everything gently to combine.

Step 12

Let the salad sit for 5-10 minutes to allow the bread to absorb some of the dressing and flavors.

Step 13

Serve immediately and enjoy!
