Ingredients

  • 120 grams Active sourdough starter
  • 240 ml Warm water
  • 400 grams Bread flour
  • 8 grams Salt
  • 10 grams Sugar

Directions

Step 1

Ensure your sourdough starter is active and bubbly. Feed it 4 to 6 hours prior to starting the recipe if necessary.

Step 2

Add the ingredients to your bread machine in the following order: warm water, sourdough starter, bread flour, salt, and sugar.

Step 3

Set your bread machine to the 'dough' cycle. This will knead the dough and allow it to begin its first rise.

Step 4

Once the dough cycle is complete, check the dough. It should be soft, smooth, and slightly sticky. If it feels too dry, add 1 tablespoon of water at a time, or if it’s too sticky, add 1 tablespoon of flour at a time. Run an additional 10-minute kneading cycle if adjusted.

Step 5

Let the dough rest in the bread machine for an extended rise, about 2 to 3 hours, or until it has doubled in size. This allows the sourdough flavor to develop fully.

Step 6

Once the dough has risen, you can bake it directly in the bread machine by setting it to the 'bake' cycle. Alternatively, you can remove the dough, shape it into a loaf or boule, and bake it in a conventional oven at 230°C (450°F) for 30 to 35 minutes.

Step 7

If baking in the bread machine, once the baking cycle is done, carefully remove the bread and allow it to cool on a wire rack for at least 1 hour before slicing.

Step 8

Enjoy your tangy, homemade sourdough bread as toast, sandwiches, or simply on its own!
