Ingredients

  • 2 pounds beef chuck (cubed)
  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 3 medium carrots (sliced)
  • 3 medium potatoes (cubed)
  • 4 cloves garlic (minced)
  • 15 ounces canned diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 leaves bay leaves
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup frozen green beans (optional)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the olive oil.

Step 2

Season the cubed beef chuck generously with salt and black pepper. In batches, brown the beef in the pot, about 2-3 minutes per side. Set the browned beef aside.

Step 3

In the same pot, add the diced onions and cook for 5 minutes until softened. Stir in the minced garlic and cook for 1 additional minute until fragrant.

Step 4

Add the carrots and potatoes to the pot, stirring to combine with the onions and garlic.

Step 5

Stir in the tomato paste, paprika, cumin, and chili powder. Cook for 2 minutes to allow the spices to bloom.

Step 6

Return the browned beef and its juices to the pot. Add the canned diced tomatoes, beef broth, Worcestershire sauce, and bay leaves. Bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and let the stew simmer for 90 minutes, stirring occasionally to prevent sticking.

Step 8

After 90 minutes, taste and adjust seasonings with additional salt or pepper as needed. If using frozen green beans, stir them in and let the stew simmer for another 10-15 minutes uncovered.

Step 9

Remove the bay leaves before serving. Ladle the stew into bowls and enjoy!
