Ingredients

  • 2 cups dried black beans
  • 8 cups water
  • 2 tablespoons olive oil
  • 1 medium-sized onion (finely chopped)
  • 3 large garlic cloves (minced)
  • 1 bay leaf
  • 8 ounces smoked sausage (sliced or diced)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh cilantro (chopped, optional)

Directions

Step 1

Rinse the dried beans under cold water, removing any debris or damaged beans.

Step 2

In a large bowl, cover the beans with water and allow them to soak for at least 8 hours or overnight. Drain before cooking.

Step 3

In a large pot, bring 8 cups of water to a boil. Add the soaked and drained beans, then reduce the heat to low. Simmer gently with the lid slightly ajar for about 60 minutes, stirring occasionally.

Step 4

While the beans cook, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Step 5

Add the minced garlic and cook for another 1-2 minutes, stirring frequently to avoid burning.

Step 6

Stir the bay leaf and smoked sausage into the skillet, cooking for another 5-7 minutes until the sausage is lightly browned.

Step 7

Once the beans are tender, add the sautéed mixture (onion, garlic, sausage, and bay leaf) into the pot with the beans. Stir well to combine.

Step 8

Season the beans with salt and black pepper. Continue cooking uncovered for another 20-30 minutes, stirring occasionally, to allow the flavors to meld and the liquid to thicken slightly. You may add more water during this time if the beans become too dry.

Step 9

Remove the bay leaf before serving. Taste and adjust seasoning as needed.

Step 10

Serve the Brazilian-style beans hot with rice and garnish with fresh cilantro if desired.
