Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon pink peppercorns
  • 1 tablespoon olive oil
  • 0.5 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 2 tablespoons fresh parsley, finely chopped (optional for garnish)

Directions

Step 1

Rinse the rice under cold running water until the water runs clear. Drain well and set aside.

Step 2

In a medium saucepan, heat the olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 2-3 minutes, stirring frequently, until translucent.

Step 4

Add the minced garlic and sauté for another 30 seconds, being careful not to burn it.

Step 5

Using a mortar and pestle or the back of a spoon, gently crush the pink peppercorns to release their aroma. Add the crushed pink peppercorns to the saucepan and stir well.

Step 6

Add the rinsed and drained rice to the saucepan. Stir for 1-2 minutes to coat the rice in the oil and spices, allowing it to toast slightly.

Step 7

Pour in the water and add the salt. Stir briefly to combine.

Step 8

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer for 15-20 minutes or until the water is absorbed and the rice is tender.

Step 9

Remove the saucepan from the heat and let the rice sit, covered, for 5 minutes to allow any remaining steam to finish cooking the rice.

Step 10

Fluff the rice with a fork and garnish with chopped fresh parsley, if desired, before serving.
