Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 4 cloves garlic cloves, minced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes (canned)
  • 1 cup light beer
  • 1 cup chicken stock
  • 1 teaspoon paprika
  • 1 leaf bay leaf
  • 4 wedges lime wedges (for serving)
  • 2 cups white rice (optional, for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides, then set aside.

Step 2

In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

Step 3

Sear the chicken thighs, skin-side down, for about 5-7 minutes until golden brown and crispy. Flip and cook for another 3 minutes on the other side. Remove the chicken and set aside.

Step 4

In the same skillet, add the sliced onions and sauté for 3-4 minutes, stirring occasionally, until softened and translucent.

Step 5

Add the minced garlic and cook for 1-2 more minutes until fragrant.

Step 6

Stir in the chopped cilantro, tomato paste, diced tomatoes, paprika, and bay leaf. Cook for 2-3 minutes, allowing the flavors to meld.

Step 7

Pour in the beer and chicken stock, stirring to combine. Bring the mixture to a simmer.

Step 8

Return the chicken thighs to the skillet, skin-side up. Reduce the heat to low, cover, and simmer for 30 minutes, allowing the chicken to become tender and absorb the flavors.

Step 9

Uncover the skillet and cook for an additional 10-15 minutes, letting the sauce thicken slightly.

Step 10

Remove from heat, discard the bay leaf, and serve the chicken hot with lime wedges on the side for squeezing. Optionally, accompany with cooked white rice.
