Ingredients

  • 1 cup whole wheat flour
  • 0.5 cup all-purpose flour
  • 1 cup wheat bran
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup pitted dates, chopped
  • 1 cup milk
  • 0.5 cup plain yogurt
  • 0.5 cup light brown sugar
  • 1 piece large egg
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, wheat bran, baking powder, baking soda, salt, and ground cinnamon.

Step 3

In a separate smaller bowl, combine the chopped dates and milk. Let the dates soak for 10 minutes to soften, then stir in the plain yogurt and set aside.

Step 4

In another medium bowl, whisk together the light brown sugar, egg, vegetable oil, and vanilla extract until smooth and combined.

Step 5

Pour the wet sugar mixture into the bowl with the softened dates and milk. Stir until fully incorporated.

Step 6

Gradually add the wet ingredients to the bowl with the dry ingredients, folding gently with a spatula until just combined. Do not overmix.

Step 7

Transfer the batter to the prepared loaf pan, spreading it out evenly. Tap the pan gently on the counter to remove any air bubbles.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 9

Once baked, remove the loaf from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container for up to 4 days.
