Ingredients

  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar (packed)
  • 0.25 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1.5 cups Bran cereal
  • 0.5 cup Raisins (optional)
  • 1 tablespoon Milk (optional, for dough consistency)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.

Step 2

In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 3

In a large bowl, use a hand or stand mixer to cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the creamed mixture, and beat until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 6

Fold in the bran cereal and raisins (if using). If the dough seems too dry, add up to 1 tablespoon of milk to achieve a soft but not sticky consistency.

Step 7

Using a tablespoon or a small cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers are just set.

Step 9

Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week.
