Ingredients

  • 500 grams pork belly
  • 100 ml soy sauce
  • 30 ml dark soy sauce
  • 2 tablespoons sugar
  • 4 pieces garlic cloves
  • 20 grams ginger
  • 300 ml water
  • 1 tablespoon cooking oil
  • 2 pieces star anise
  • 1 piece cinnamon stick
  • 2 pieces spring onions (green part only)
  • 1 teaspoon salt

Directions

Step 1

Cut the pork belly into 2-inch cubes. Set aside.

Step 2

Prepare the aromatics by smashing the garlic cloves and slicing the ginger into thin slices.

Step 3

Heat 1 tablespoon of cooking oil in a deep pot or Dutch oven over medium-high heat.

Step 4

Add the pork belly pieces to the pot and sear them until golden brown on all sides. Remove and set aside.

Step 5

In the same pot, add the garlic, ginger, star anise, and cinnamon stick, stirring for 1-2 minutes until fragrant.

Step 6

Pour in the soy sauce, dark soy sauce, and sugar. Stir until the sugar dissolves completely.

Step 7

Return the pork belly to the pot and mix well, ensuring the sauce coats the meat evenly.

Step 8

Add water to the pot and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 60 minutes, stirring occasionally.

Step 9

Check the sauce after 60 minutes; it should have thickened slightly. If necessary, simmer uncovered for an additional 10-15 minutes to reduce the liquid further.

Step 10

Season with salt to taste and garnish with chopped spring onions before serving.

Step 11

Serve hot with steamed white rice or vegetables for a complete meal.
