Ingredients

  • 6 pieces chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 0.5 cup dry white wine
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat olive oil in a large Dutch oven or heavy skillet over medium-high heat.

Step 3

Add the chicken thighs skin-side down and sear until golden brown, about 5-6 minutes on each side. Transfer the chicken to a plate and set aside.

Step 4

In the same pot, add the chopped onion, sliced carrots, and sliced celery. Sauté the vegetables for about 5 minutes until they start to soften.

Step 5

Add the minced garlic and cook for another minute until fragrant.

Step 6

Pour in the chicken broth and white wine, scraping up any brown bits from the bottom of the pot.

Step 7

Stir in the dried thyme and add the bay leaf. Bring the mixture to a simmer.

Step 8

Return the chicken thighs to the pot, skin-side up, and cover the pot with a lid.

Step 9

Reduce the heat to low and let the chicken braise for about 45 minutes or until the chicken is tender and cooked through.

Step 10

Remove the bay leaf and discard it.

Step 11

Sprinkle the chopped fresh parsley over the chicken before serving.

Step 12

Serve the braised chicken hot, over mashed potatoes or with slices of crusty bread to soak up the sauce.
