Ingredients

  • 2 pounds Beef chuck roast
  • 3 teaspoons Black tea (loose-leaf or tea bags)
  • 2 cups Beef broth
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 1 Onion, diced
  • 4 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 Cinnamon stick
  • 2 pods Star anise
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Vegetable oil
  • 3 Carrots, peeled and cut into chunks
  • 4 Potatoes, peeled and quartered
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C). Alternatively, you can do this recipe on the stovetop at a low simmer or in a slow cooker on low.

Step 2

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and add the vegetable oil.

Step 3

Season the beef chuck roast generously with salt and black pepper. Sear the beef on all sides until deep brown, about 3-4 minutes per side. Remove the beef and set aside.

Step 4

In the same pot, add the diced onion and cook for 2-3 minutes until softened. Add the garlic and ginger, stir, and cook for another minute until fragrant.

Step 5

Pour in the beef broth and soy sauce. Stir in the brown sugar to dissolve.

Step 6

Add the loose black tea (or tea bags), cinnamon stick, and star anise to the pot. If using tea bags, you can tie them to the pot handle for easy removal later.

Step 7

Return the seared beef to the pot and ensure it is mostly submerged in the liquid. Bring the mixture to a gentle simmer.

Step 8

Cover the pot with a lid and transfer it to the preheated oven. Cook for 2.5 to 3 hours, or until the beef is fork-tender.

Step 9

About 45 minutes before the beef is done, add the carrots and potatoes to the pot. Stir to coat them in the braising liquid.

Step 10

Once cooking is complete, remove the pot from the oven. Discard the star anise, cinnamon stick, and tea bags (if used).

Step 11

Taste the braising liquid and adjust seasoning with additional salt or soy sauce as needed.

Step 12

Slice or shred the beef and serve it with the braised vegetables and a ladle of the flavorful broth.

Step 13

Garnish with fresh parsley before serving. Enjoy!
