Ingredients

  • 2 pounds Beef flank steak
  • 6 slices Smoked bacon
  • 1 large Yellow onion
  • 1 large Red bell pepper
  • 1 tablespoon Sweet paprika
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 2 cups Beef stock
  • 1 tablespoon Tomato paste
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Parsley

Directions

Step 1

Lay the beef flank steak flat on a cutting board and, if necessary, gently pound to an even thickness of about 1/4 inch using a meat mallet or rolling pin.

Step 2

Season both sides of the steak with salt and black pepper.

Step 3

Finely dice the smoked bacon, yellow onion, red bell pepper, and garlic.

Step 4

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Sauté the diced bacon until it begins to crisp, about 3-4 minutes.

Step 5

Add the diced onions, red bell pepper, and garlic to the skillet. Cook for another 4-5 minutes until softened.

Step 6

Remove the skillet from heat and stir in the sweet paprika. Let the filling cool slightly.

Step 7

Spread the bacon and vegetable mixture evenly over the surface of the beef steaks.

Step 8

Roll the beef tightly around the filling, securing the rolls with kitchen twine or toothpicks.

Step 9

Lightly coat the outside of the beef rolls with flour, shaking off any excess.

Step 10

In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat. Sear the beef rolls on all sides until browned, about 2 minutes per side. Remove the rolls and set them aside.

Step 11

Lower the heat to medium, add the tomato paste to the skillet, and cook for 1 minute, stirring constantly.

Step 12

Pour in the beef stock and bring to a simmer, scraping up any browned bits from the bottom of the skillet.

Step 13

Return the beef rolls to the skillet, cover, and reduce the heat to low. Simmer gently for 60-75 minutes, turning the rolls occasionally until the beef is tender.

Step 14

Remove the beef rolls from the skillet and set aside. Increase the heat to medium-high and reduce the sauce by half, about 5-7 minutes, stirring occasionally.

Step 15

Taste and adjust seasoning with additional salt and black pepper as needed.

Step 16

Serve the beef rolls with the sauce spooned over the top, garnished with freshly chopped parsley. Enjoy!
