Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Dried thyme
  • 0.5 cup Balsamic vinegar
  • 0.5 cup Chicken broth
  • 1 cup Cherry tomatoes, halved
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken breasts to the skillet and cook for 3–4 minutes per side, or until golden brown. Remove from the skillet and set aside.

Step 4

Lower the heat to medium and add the minced garlic to the skillet. Cook for 1 minute until fragrant, being careful not to burn it.

Step 5

Stir in the dried basil, oregano, rosemary, and thyme, letting the herbs toast lightly for about 30 seconds.

Step 6

Pour in the balsamic vinegar and chicken broth, scraping the bottom of the pan to deglaze and incorporate any browned bits.

Step 7

Bring the liquid to a simmer, then return the chicken breasts to the skillet.

Step 8

Add the halved cherry tomatoes around the chicken and cover the skillet with a lid.

Step 9

Reduce the heat to low and let the chicken braise for 20–25 minutes, or until it is cooked through and registers an internal temperature of 165°F (74°C).

Step 10

Remove the skillet from the heat and let the chicken rest for 5 minutes. Taste the sauce and adjust seasoning with more salt or pepper if needed.

Step 11

Garnish with freshly chopped parsley, if desired, and serve warm with your choice of sides such as rice, mashed potatoes, or steamed vegetables.
