Ingredients

  • 2 racks Baby back ribs
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 2 tablespoons Brown sugar
  • 2 tablespoons Olive oil
  • 1 medium Onion (sliced)
  • 4 cloves Garlic cloves (minced)
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Tomato paste
  • 2 tablespoons Apple cider vinegar
  • 0.5 cup Barbecue sauce (optional for glazing)

Directions

Step 1

Preheat your oven to 325°F (162°C).

Step 2

Prepare the ribs by removing the silver skin membrane from the underside of each rack. Use a paper towel for grip if needed.

Step 3

In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, and brown sugar to create a dry rub.

Step 4

Rub the spice mixture generously over both sides of the ribs. Let them sit at room temperature for 15 minutes.

Step 5

Heat olive oil in a large oven-safe Dutch oven or heavy pot over medium heat.

Step 6

Add the ribs to the pot in batches and sear them on both sides until golden brown, about 3-4 minutes per side. Remove the ribs and set them aside.

Step 7

In the same pot, sauté the sliced onion and minced garlic until softened and fragrant, about 3-5 minutes.

Step 8

Stir in the tomato paste and cook for 1 minute, then deglaze the pot with apple cider vinegar, scraping up the browned bits on the bottom.

Step 9

Add the beef broth and Worcestershire sauce, stirring to combine.

Step 10

Return the ribs to the pot, stacking them if necessary. Ensure they are mostly submerged in the liquid.

Step 11

Cover the pot with a lid and transfer it to the preheated oven. Braise the ribs for 2.5 to 3 hours, or until the ribs are tender and the meat is just about falling off the bone.

Step 12

If desired, remove the ribs from the liquid and brush them with barbecue sauce. Place them on a baking sheet and broil on high for 3-5 minutes to caramelize the sauce.

Step 13

Serve the ribs hot with your favorite side dishes, such as mashed potatoes, coleslaw, or cornbread.
