Ingredients

  • 1 lb ground spicy sausage
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium yellow onion
  • 2 cloves minced garlic
  • 14.5 oz canned diced tomatoes
  • 15 oz canned black beans
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8.5 oz cornbread mix
  • 0.5 cup milk
  • 1 large egg
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup sour cream (for serving, optional)
  • 2 tbsp chopped fresh cilantro (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish and set aside.

Step 2

Dice the red bell pepper, green bell pepper, and onion into small pieces. Drain and rinse the black beans.

Step 3

Heat a large skillet over medium heat. Add the ground spicy sausage and cook until browned, breaking it apart with a spatula. Drain any excess grease if necessary.

Step 4

Add the diced bell peppers, onion, and minced garlic to the skillet. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 5

Stir in the canned diced tomatoes (with their juice), black beans, smoked paprika, ground cumin, chili powder, salt, and black pepper. Simmer for 5 minutes to combine the flavors.

Step 6

Pour the sausage and vegetable mixture into the prepared baking dish and spread evenly.

Step 7

In a mixing bowl, combine the cornbread mix, milk, and egg according to the package instructions. Fold in the shredded sharp cheddar cheese.

Step 8

Spread the cornbread batter evenly over the sausage mixture in the baking dish.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cornbread topping is golden brown and cooked through. A toothpick inserted in the center should come out clean.

Step 10

Remove the dish from the oven and let it cool for 5 minutes before serving.

Step 11

Optional: Top with a dollop of sour cream and garnish with chopped cilantro before serving.
