Ingredients

  • 300 ml Strong black tea
  • 300 g Mixed dried fruits (e.g., raisins, sultanas, currants)
  • 150 g Light brown sugar
  • 250 g Self-raising flour
  • 1 large Egg
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg

Directions

Step 1

Brew 300ml of strong black tea and let it cool to room temperature.

Step 2

In a large mixing bowl, combine the mixed dried fruits and light brown sugar.

Pour the cooled tea over the fruit and sugar mixture, stirring well. Cover the bowl and let it sit overnight, or for at least 4 hours, to allow the fruits to absorb the tea.

Preheat the oven to 170°C (325°F) and then grease and line a 2lb (900g) loaf tin with parchment paper.

In a separate bowl, sift together the self-raising flour, ground cinnamon, and ground nutmeg.
