Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 bell peppers, diced (any color)
  • 1 jalapeño pepper, diced (optional, for extra heat)
  • 28 oz canned diced tomatoes, with juice
  • 15 oz canned kidney beans, drained and rinsed
  • 15 oz canned black beans, drained and rinsed
  • 3 tbsp tomato paste
  • 2 cups beef or vegetable broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)
  • 0.5 cup shredded cheddar cheese (optional, for serving)
  • 2 green onions, sliced (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the diced onion and garlic, cooking for 2-3 minutes until softened and fragrant.

Step 3

Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

Step 4

Stir in the diced bell peppers and optional jalapeño, cooking for another 3-4 minutes to soften.

Step 5

Add the tomato paste and stir to coat the vegetables and beef evenly. Cook for 2 minutes to enhance the flavor.

Step 6

Pour in the diced tomatoes (with their juice), kidney beans, black beans, and broth. Stir well to combine.

Step 7

Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper. Stir thoroughly.

Step 8

Bring the mixture to a simmer over medium-high heat, then reduce the heat to low and cover. Allow it to simmer gently for 30 minutes, stirring occasionally.

Step 9

Taste and adjust the seasoning with more salt or spices if desired.

Step 10

Serve hot, garnished with fresh cilantro, green onions, shredded cheddar cheese, or a dollop of sour cream if desired.
