Ingredients

  • 6 large Eggs
  • 4 ounces Boursin cheese (Garlic & Fine Herbs flavor)
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh chives (optional, for garnish)
  • 0.25 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Place the eggs in a medium saucepan and add enough cold water to cover them by about 1 inch. Bring the water to a boil over medium-high heat.

Step 2

Once the water reaches a rolling boil, turn off the heat, cover the pot, and let the eggs sit in the hot water for 12 minutes.

Step 3

Carefully drain the hot water and transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This makes them easier to peel.

Step 4

Peel the eggs and slice them in half lengthwise. Gently remove the yolks and transfer them to a medium mixing bowl; place the egg whites on a serving platter.

Step 5

To the mixing bowl with the yolks, add the Boursin cheese, mayonnaise, Dijon mustard, salt, and black pepper. Mash the mixture together with a fork until creamy and smooth.

Step 6

Transfer the yolk mixture to a piping bag fitted with a star tip (or use a zip-top bag with one corner snipped off). Pipe the filling into the hollowed-out egg whites, being generous with the filling.

Step 7

If desired, finely chop fresh chives and sprinkle over the stuffed eggs for a burst of color and flavor. Optionally, dust the eggs lightly with paprika for a classic garnish.

Step 8

Serve immediately or refrigerate until ready to serve. These can be made up to 4 hours in advance.
