Ingredients

  • 8 lb bone-in spiral-cut ham
  • 1 cup dark brown sugar
  • 0.5 cup bourbon
  • 2 tbsp Dijon mustard
  • 0.25 cup maple syrup
  • 4 tbsp unsalted butter
  • 1 cup pecans, finely chopped
  • 2 tbsp light corn syrup
  • 0.5 tsp kosher salt
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground cloves

Directions

Step 1

Preheat your oven to 325°F (163°C). Place the ham cut-side down in a large roasting pan, and cover tightly with aluminum foil.

Step 2

Bake the ham for approximately 1 hour and 30 minutes, or until the internal temperature reads 120°F (49°C) when checked with a meat thermometer.

Step 3

While the ham is baking, prepare the bourbon glaze. In a medium saucepan, combine the dark brown sugar, bourbon, Dijon mustard, maple syrup, and unsalted butter. Heat over medium heat, stirring often, until the mixture simmers and thickens, about 5-7 minutes. Remove from heat and set aside.

Step 4

In a small bowl, mix the finely chopped pecans, light corn syrup, kosher salt, ground cinnamon, and ground cloves to make the praline topping.

Step 5

Once the ham reaches 120°F (49°C), carefully remove it from the oven and increase the oven temperature to 400°F (204°C). Discard the aluminum foil.

Step 6

Brush the ham generously with the bourbon glaze, ensuring all exposed surfaces are coated. Return the ham to the oven, uncovered, and bake for an additional 20 minutes.

Step 7

After 20 minutes, remove the ham and sprinkle the praline topping evenly over the surface. Press gently to help the topping adhere.

Step 8

Return the ham to the oven and bake for another 15-20 minutes, or until the topping is golden and caramelized, and the internal temperature of the ham is 140°F (60°C).

Step 9

Remove the ham from the oven and let it rest for 10-15 minutes before slicing and serving. Enjoy your Bourbon and Praline Ham!
