  • 1 teaspoon Dried oregano
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 large Lime, cut into wedges (optional, for serving)

Directions

Step 1

Rinse the dried pinto beans thoroughly under cold water, removing any debris or damaged beans.

Place the beans in a large bowl and cover them with water. Let them soak overnight, or for at least 8 hours. Drain and set aside.

In a large pot or Dutch oven, cook the chopped bacon over medium heat until it is crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave the rendered bacon fat in the pot.
