Ingredients

  • 12 pieces Phyllo pastry sheets
  • 200 grams Feta cheese
  • 100 grams Ricotta cheese
  • 200 grams Fresh spinach
  • 15 grams Fresh parsley
  • 1 large Egg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Butter
  • 1 tablespoon Olive oil
  • 2 tablespoons Sesame seeds
  • 3 tablespoons Water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Wash and dry the fresh spinach, then chop it into small pieces. Finely chop the parsley.

Step 3

In a large mixing bowl, combine the feta cheese, ricotta cheese, spinach, parsley, and 1 egg. Season with salt and black pepper, and mix thoroughly to create the filling.

Step 4

Melt the butter in a small saucepan or microwave, then mix it with 1 tablespoon of olive oil.

Step 5

Place a sheet of phyllo pastry on a flat surface. Brush lightly with the butter-olive oil mixture. Add another sheet on top and brush again.

Step 6

Cut the stacked phyllo sheets into 3 equal strips lengthwise to create long rectangles.

Step 7

Place about 1 tablespoon of the cheese and spinach filling at one end of each strip. Fold the corner of the pastry over the filling to form a triangle. Continue folding the strip, maintaining the triangular shape, until you reach the end of the strip. Repeat with the remaining phyllo sheets and filling.

Step 8

Arrange the folded triangles onto the prepared baking sheet, seam-side down. Brush the tops with the remaining butter-olive oil mixture.

Step 9

Sprinkle sesame seeds over the top of the triangles for added texture and flavor.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and crispy.

Step 11

Allow the böreks to cool for a few minutes before serving. Serve warm or at room temperature as an appetizer or snack.
