Ingredients

  • 12 sheets phyllo dough
  • 200 grams feta cheese
  • 100 grams ricotta cheese
  • 300 grams fresh spinach
  • 1 large onion
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons sesame seeds
  • 2 tablespoons milk

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat 2 tablespoons of olive oil in a pan over medium heat.

Step 3

Finely chop the onion and sauté it in the oil until it is soft and translucent, about 5 minutes.

Step 4

Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat.

Step 5

In a mixing bowl, combine the feta cheese, ricotta cheese, cooked spinach-onion mixture, salt, and black pepper. Mix well.

Step 6

Lay a sheet of phyllo dough on a clean, dry surface and brush it lightly with olive oil. Place another sheet on top and brush again with oil. Repeat this process until you have a stack of 4 sheets.

Step 7

Spread a portion of the cheese and spinach mixture along one edge of the phyllo stack.

Step 8

Carefully roll the phyllo dough, starting from the edge with the filling, to form a tight cylinder. Place the cylinder seam side down on a baking tray lined with parchment paper.

Step 9

Repeat the process with the remaining phyllo sheets and filling.

Step 10

In a small bowl, beat the egg with milk and brush the top of each borek roll with this mixture.

Step 11

Sprinkle sesame seeds over the rolls for added flavor and texture.

Step 12

Bake in the preheated oven for 30-35 minutes, or until the borek is golden brown and crispy.

Step 13

Allow the borek to cool for a few minutes before slicing and serving. Enjoy!
