Ingredients

  • 6 pieces eggs
  • 1 large onion
  • 2 large tomatoes
  • 1 inch ginger
  • 3 pieces garlic cloves
  • 2 pieces green chilies
  • 3 tablespoons vegetable oil
  • 0.5 teaspoons turmeric powder
  • 1 teaspoons red chili powder
  • 1 teaspoons ground coriander
  • 1 teaspoons ground cumin
  • 1 teaspoons garam masala
  • 1 teaspoons salt
  • 1 cup water
  • 2 tablespoons fresh coriander leaves (cilantro)

Directions

Step 1

Place the eggs in a medium-sized pot, cover with water, and bring to a boil. Once boiling, cook for 10 minutes. Remove, cool under cold running water, peel the shells, and set aside.

Step 2

Finely chop the onion, tomatoes, green chilies, and coriander leaves. Mince the ginger and garlic.

Step 3

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 4

Add the chopped onion to the skillet and sauté until golden and translucent, about 5 minutes.

Step 5

Add the minced ginger, garlic, and green chilies. Sauté for another 1-2 minutes until fragrant.

Step 6

Stir in the turmeric powder, red chili powder, ground coriander, and ground cumin. Cook the spices for 30 seconds to bloom their flavors.

Step 7

Add the chopped tomatoes to the skillet and cook until they break down and turn into a thick paste, about 5-7 minutes.

Step 8

Season the mixture with salt and pour in 1 cup of water. Stir to combine and bring the mixture to a simmer.

Step 9

Cut the boiled eggs in half and gently place them into the curry, with the yolks facing up.

Step 10

Reduce the heat to low and let the eggs absorb the flavors of the curry for 5 minutes.

Step 11

Sprinkle garam masala on top and garnish with fresh coriander leaves.

Step 12

Serve hot with steamed rice, naan, or parathas.
