Ingredients

  • 500 grams baby potatoes
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander leaves (chopped)
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Wash the baby potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook for about 10-12 minutes, or until the potatoes are fork-tender. Drain and allow them to cool slightly.

Step 2

Once the potatoes are cool enough to handle, peel them if desired (this step is optional) and cut them into halves or quarters, depending on their size.

Step 3

Heat the vegetable oil in a large non-stick skillet over medium heat. Once the oil is hot, add the mustard seeds and cumin seeds and let them sizzle for 30 seconds until aromatic.

Step 4

Reduce the heat to low and add the turmeric powder, ground coriander, ground cumin, garam masala, and red chili powder. Stir the spices into the oil and cook for 1 minute to release their flavors.

Step 5

Increase the heat to medium and add the boiled potatoes to the skillet. Sprinkle with salt and toss gently to coat the potatoes in the spiced oil mixture.

Step 6

Cook the potatoes, stirring occasionally, for 10-12 minutes or until they turn golden and crispy on the edges.

Step 7

Remove the skillet from heat, stir in the fresh lemon juice, and garnish with chopped coriander leaves.

Step 8

Serve the Bombay Spiced Potatoes warm as a side dish alongside curries or flatbreads, or enjoy as a flavorful appetizer.
