Ingredients

  • 300 g All-purpose flour
  • 200 g Granulated sugar
  • 150 g Unsalted butter
  • 4 Eggs
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 1 tbsp Orange zest
  • 60 ml Orange juice
  • 30 ml Dark rum or brandy
  • 100 g Dried figs (chopped)
  • 100 g Raisins
  • 80 g Candied orange peel (chopped)
  • 100 g Walnuts (chopped)
  • 80 g Blanched almonds (sliced)
  • 12 Candied cherries
  • 2 tbsp Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a round bundt or cake pan generously with butter. Lightly dust the pan with flour, tapping out the excess.

In a medium bowl, sift together the flour, baking powder, cinnamon, and nutmeg. Set aside.

In a large mixing bowl, cream the butter and sugar together until light and fluffy using a hand or stand mixer. This should take about 3-4 minutes.

Add the eggs one at a time to the butter mixture, beating well after each addition.
