  • 2 tablespoons, chopped (for garnish) Fresh cilantro

Directions

Step 1

Clean and wash the chicken thoroughly. If desired, remove the skin for a leaner dish.

In a large, heavy-bottomed pot, add the whole chicken, water, and 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce the heat to low. Simmer for about 1 hour, skimming off any foam or impurities that rise to the surface.
