Ingredients

  • 400 grams Baby bok choy
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch
  • 3 tablespoons Water
  • 1 tablespoon Neutral cooking oil (e.g., vegetable oil)
  • 0.5 teaspoon Red chili flakes (optional)

Directions

Step 1

Wash the baby bok choy thoroughly under running water to remove any dirt. Slice each bok choy in half lengthwise, and if they are large, further cut them into quarters. Pat dry with a clean kitchen towel.

Step 2

Mince the garlic cloves and finely grate or mince the ginger.

Step 3

In a small bowl, whisk together the soy sauce, oyster sauce, sugar, cornstarch, and water. Set aside.

Step 4

Heat a wok or large skillet over medium-high heat. Add the sesame oil followed by the minced garlic and ginger. Stir-fry for about 30 seconds until aromatic, making sure not to burn them.

Step 5

Add the neutral cooking oil to the wok, followed by the bok choy. Stir-fry for 3–4 minutes, tossing frequently, until the leaves wilt and the stems are tender-crisp.

Step 6

Pour the sauce mixture into the wok and toss to coat the bok choy evenly. Cook for another 1–2 minutes, allowing the sauce to thicken slightly.

Step 7

If using red chili flakes, sprinkle them over the dish for a hint of heat.

Step 8

Remove from heat and transfer the stir fry to a serving dish. Serve immediately as a side dish or over steamed rice for a light meal.
