Ingredients

  • 2 pounds pork shoulder or pork butt
  • 10 cups water
  • 2 teaspoons salt
  • 1 teaspoon black peppercorns
  • 2 pieces bay leaves
  • 4 cloves garlic cloves, peeled and smashed
  • 1 piece yellow onion, peeled and halved
  • 4 pieces carrots, peeled and cut into 2-inch chunks
  • 4 pieces potatoes, peeled and halved
  • 1 head green cabbage, cut into wedges
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

In a large pot, add the pork shoulder or pork butt and cover with 10 cups of water.

Step 2

Bring the water to a boil over medium-high heat. Use a spoon to skim off any foam or impurities that rise to the top.

Step 3

Once the water is clear, add the salt, black peppercorns, bay leaves, smashed garlic cloves, and halved onion to the pot.

Step 4

Reduce the heat to low and cover the pot with a lid. Simmer for 1.5 hours or until the pork is tender when pierced with a fork.

Step 5

After 1.5 hours, add the carrots and potatoes to the pot. Simmer for an additional 20 minutes until the vegetables are tender.

Step 6

Finally, add the cabbage wedges to the pot. Simmer for another 10 minutes until the cabbage is wilted but still holds its shape.

Step 7

Taste the broth and adjust seasoning with additional salt if necessary.

Step 8

Remove the pork from the pot and slice it into large chunks for serving. Plate the pork alongside the vegetables.

Step 9

Ladle some of the flavorful broth over the pork and vegetables, and sprinkle with chopped parsley if desired.

Step 10

Serve hot and enjoy your hearty Boiled Pork Dinner!
