Ingredients

  • 400 grams Mixed dried fruit (e.g., raisins, sultanas, currants, chopped candied peel)
  • 150 grams Butter
  • 200 grams Brown sugar
  • 250 ml Water
  • 2 tablespoons Honey
  • 300 grams All-purpose flour
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 100 grams Chopped nuts (e.g., almonds, walnuts) (optional)

Directions

Step 1

In a medium saucepan, combine the mixed dried fruit, butter, brown sugar, water, and honey. Place over medium heat and bring to a boil.

Step 2

Reduce the heat and let the mixture simmer gently for 5 minutes, stirring occasionally. Remove the saucepan from the heat and let the mixture cool to room temperature, about 20-30 minutes.

Step 3

Preheat your oven to 150°C (300°F) and grease and line a 20cm (8-inch) round cake tin with parchment paper.

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, and ground nutmeg.

In a separate small bowl, lightly beat the eggs and stir in the vanilla extract.
