In a medium saucepan, combine the mixed dried fruit, butter, brown sugar, water, and honey. Place over medium heat and bring to a boil.
Reduce the heat and let the mixture simmer gently for 5 minutes, stirring occasionally. Remove the saucepan from the heat and let the mixture cool to room temperature, about 20-30 minutes.
Preheat your oven to 150°C (300°F) and grease and line a 20cm (8-inch) round cake tin with parchment paper.
In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, and ground nutmeg.
In a separate small bowl, lightly beat the eggs and stir in the vanilla extract.
Once the boiled fruit mixture has cooled, add the beaten eggs and vanilla to it and stir until combined.
Gradually fold the dry ingredients into the fruit mixture until just combined. If using chopped nuts, fold them in at this stage.
Pour the batter into the prepared cake tin and smooth the surface with a spatula.
Bake in the preheated oven for 90 minutes, or until a skewer inserted into the center of the cake comes out clean.
Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, optional: brush the top with a little warmed honey or apricot jam for a shiny finish. Slice and serve!
