Ingredients

  • 150 grams unsalted butter
  • 200 grams caster sugar
  • 100 grams brown sugar
  • 50 grams cocoa powder
  • 250 milliliters milk
  • 150 grams chopped pitted cherries (fresh or canned, drained)
  • 200 grams plain flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 1 teaspoon vanilla extract
  • 2 large eggs

Directions

Step 1

In a medium saucepan, combine the unsalted butter, caster sugar, brown sugar, cocoa powder, and milk. Place the saucepan over medium heat and stir until the butter has melted and the mixture is smooth. Bring it to a gentle boil and let it simmer for 2 minutes, then remove from heat and allow to cool for 10-15 minutes.

Preheat the oven to 160°C (320°F). Grease and line a 20cm (8-inch) round cake tin with baking paper.

Once the boiled mixture has cooled, stir in the chopped cherries and vanilla extract.
