Ingredients

  • 5 kg Bone-in ham
  • 1 large Onion
  • 1 large Carrot
  • 2 stalks Celery
  • 2 pieces Bay leaves
  • 10 pieces Black peppercorns
  • 12 pieces Whole cloves
  • 100 grams Brown sugar
  • 60 ml Honey
  • 2 tbsp Dijon mustard
  • 0.5 tsp Ground cinnamon
  • 0.25 tsp Ground cloves

Directions

Step 1

Place the ham in a large stockpot and cover with cold water.

Step 2

Add the onion (peeled and halved), carrot (peeled and roughly chopped), celery stalks, bay leaves, and black peppercorns to the pot.

Step 3

Bring the water to a boil, then reduce to a simmer. Cover the pot and let the ham cook gently for 2 hours.

Step 4

Preheat your oven to 200°C (400°F).

Once boiled, carefully remove the ham from the pot and allow it to cool slightly. Using a sharp knife, remove the skin, leaving a thin layer of fat.
