  • 3 medium Carrots, peeled and sliced
  • 250 grams Baby bella mushrooms, quartered
  • 1 cup Pearl onions, peeled
  • 3 cloves Garlic, minced
  • 1 leaf Bay leaf
  • 2 sprigs Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, heat 1 teaspoon of olive oil over medium heat.

Step 2

In batches, sear the beef cubes until browned on all sides, about 2-3 minutes per side. Remove and set aside.

Add the remaining 1 teaspoon of olive oil to the pot and sauté the garlic, pearl onions, and carrots for 5 minutes until softened slightly.
