  • 1 medium Red bell pepper, diced
  • 1 medium Jalapeño, seeded and diced
  • 28 ounces Canned crushed tomatoes
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned black beans, drained and rinsed
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)
  • 0 Sour cream (optional topping)
  • 0 Shredded cheddar cheese (optional topping)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat.

Step 2

Add the ground beef and ground pork. Cook until browned, breaking up the meat with a spatula or spoon, about 5-7 minutes. Drain excess fat and set the cooked meat aside.

Step 3

In the same pot, add the diced onion, red bell pepper, and jalapeño. Sauté for 5 minutes until the vegetables are softened.

Step 4

Add the minced garlic and cook for 1 more minute until fragrant.

Step 5

Stir in the tomato paste, chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Return the cooked meat to the pot and stir well to combine with the spices and vegetables.

Step 7

Pour in the canned crushed tomatoes, kidney beans, black beans, and beef broth. Stir well.

Step 8

Add the brown sugar and bring the chili to a gentle boil.

Step 9

Reduce the heat to low and let the chili simmer uncovered for 45 minutes, stirring occasionally to prevent sticking.

Step 10

Taste and adjust seasoning as needed.

Step 11

Serve the chili warm, garnished with fresh cilantro, sour cream, and shredded cheddar cheese as desired.
