Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 teaspoons Chili powder
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 cup Black beans, drained and rinsed
  • 1.5 cups Cooked long-grain rice
  • 1 cup Shredded cheddar cheese
  • 4 Flour tortillas (10-inch)
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 2 tablespoons Chopped fresh cilantro
  • 4 Fresh lime wedges

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes, until softened.

Step 2

Add the minced garlic and ground beef to the skillet. Cook for 6-8 minutes, breaking the beef into crumbles as it cooks, until browned and fully cooked.

Step 3

Stir in chili powder, ground cumin, smoked paprika, and salt. Cook for 1-2 minutes to bloom the spices.

Step 4

Add the black beans to the skillet and heat through for 2-3 minutes. Remove the skillet from heat and set aside.

Step 5

Warm the flour tortillas in a dry skillet or microwave for 20-30 seconds to make them pliable.

Step 6

To assemble the burritos, lay a tortilla flat and add a scoop of rice, a spoonful of the beef and bean mixture, some shredded cheddar cheese, lettuce, tomatoes, and a dollop of sour cream and salsa.

Step 7

Fold in the sides of the tortilla and roll it tightly from bottom to top to form a burrito. Repeat with the remaining tortillas and fillings.

Step 8

Optional: Heat a skillet over medium heat and toast the burritos seam-side down for 1-2 minutes on each side to give them a slight crispness.

Step 9

Garnish with chopped fresh cilantro and serve with lime wedges on the side.
