Ingredients

  • 500 g minced beef or lamb
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 bread slice
  • 200 ml milk
  • 2 tbsp apricot jam
  • 1 tbsp lemon juice
  • 50 g raisins
  • 2 tbsp chutney
  • 2 large eggs
  • 4 bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat the vegetable oil in a large skillet over medium heat.

Step 3

Sauté the chopped onion for 3-4 minutes until soft and translucent. Add the minced garlic and cook for another minute.

Step 4

Stir in the curry powder, turmeric, coriander, and cinnamon. Cook for 1 minute until the spices release their aroma.

Step 5

Add the minced meat to the skillet. Cook and stir until it's browned and fully cooked through, breaking up any clumps.

Step 6

In a small bowl, soak the bread slice in half of the milk (100 ml) until soft. Squeeze out the excess milk and crumble the bread into the skillet.

Step 7

Stir in the apricot jam, lemon juice, raisins, chutney, salt, and pepper. Mix well to combine and allow to simmer gently for 5 minutes.

Step 8

Transfer the meat mixture to a greased ovenproof dish and flatten the surface with a spatula.

Step 9

Whisk the eggs with the remaining milk (100 ml) in a bowl. Pour the egg mixture evenly over the meat in the dish.

Step 10

Arrange the bay leaves on top for a decorative touch and added flavor.

Step 11

Bake in the preheated oven for 30-35 minutes or until the egg topping is set and lightly golden.

Step 12

Remove from the oven, allow to cool slightly, and serve warm with rice, chutney, or a fresh salad.
